Once your keg has been tapped and hooked up it stays the freshest for 12 to 24 hours. The beer will last longer than the 24 hours, it just won’t be quite as fresh.
CO2 tanks last a varying amount of time depending on size. A general rule of thumb is that it takes 1/2 pound of CO2 to dispense a quarter barrel of beer.
